Vitamin A is a fat-soluble vitamin, organic compound, stable to heat, acid and alkali, easily oxidised, UV light can promote its oxidative destruction. Vitamin A includes A1 and A2, A1 is retinol, and vitamin A2 is 3-dehydroretinol, whose physiological activity is 40 per cent of that of vitamin A1.
