Its aqueous solution demonstrates acidic properties. Upon exposure to air, it undergoes rapid oxidation into dehydroascorbic acid with a sour taste reminiscent of citric acid. Possessing potent reducing properties,this compound gradually develops varying degrees of light yellow color during prolonged storage.Abundantly present in various fresh vegetables and fruits where it plays pivotal roles in biological redox reactions including facilitating cellular respiration,promoting nucleic acid synthesis,and enhancing erythrocyte production.
